Philosophy
Words from the creator - Chef Darren Chin
As I venture into the world of pastry, I realise it has always been my dream to
build a pastry concept. And to relive my years in Paris. I vividly remember my first bite of a chocolate eclair, a
longish choux pastry stuffed with a lightly dense chocolate pastry cream, laced with a luscious
chocolate glaze. It was simply heavenly. In time, I drew inspiration from maitre patissier Philippe
Conticini for his flawless execution of creme chantilly and reinvention of the paris-brest, Cedric
Grolet for his fruit forward inspirations, and my pastry mentor from Le Cordon Bleu, Jean Francois
Deguignet, who was a master of sugar and chocolate work and was a great educator of technique
and execution.
At Monsieur Darren, I would like to give all dessert lovers a sense of comfort, lightness and
resonance of pastry bliss. I wish you bon appetit and welcome you to the sweet world of MD.
Sweet memories are definitely made of these.

I started to realise that for me, the joy of cooking, apart from seeing the happy faces of my guests, lie in challenging myself with new techniques and flavours, and allowing myself and my team to be open to that challenge.

What resonates for me is the feel of MD - it is vintage classic with a flair of aesthetic and artfulness. It brings me back to my roots where I grew up around my family pastry shop. To me, MD represents a passion to fully express myself through my creations. And to build MD brick by brick and seeing the growth as being my utmost pride and joy. Everything is made from scratch: from choosing the best ingredients to crafting out delicious pastries. This gives me an immense sense of self fulfillment.
